Chef Likes Different Combos…

Since Robert Mondavi Winery has got an upcoming Winemaker’s dinner at their estate (Aug 25, sorry gang, it’s already sold-out however some seats are still available for chef Jeff Mosher’s Autumn Fête dinner on Sept 22) the Insider thought it would be cool to get the man who has been with the estate since 2009, Mosher to do the NSI quiz. To get an idea of what might be on offer at the dinners one needs to read a quote from Mosher when he was a guest chef at the esteemed Pebble Beach wine fest. “I am constantly thinking about new dishes and flavor combinations. I just can’t help it.” Looks like the prescient people who booked fast for the Mondavi dinners are in for some interesting combinations between Mondavi’s wines and Mosher’s new creations. Enjoy.

What was last night’s dinner? One of my kids is on a paleo diet for health reasons so we had seared Alaskan halibut with quinoa, sautéed summer vegetables and green goddess dressing.

What is your favorite drink? Beer, mostly IPA

Favorite dining spot in Napa? Zuzu

Favorite music? 90’s hip hop

Favorite thing about living and working in Napa? The products. The abundance of fresh organic fruits and vegetables, the numerous artisan cheese and salumi makers, and the ethical ranchers and farmers. Oh, and the wine of course.

What makes a good restaurant or dinner? From the restaurant perspective it is attention to detail, anticipating customers needs and desires, and making it happen before they ask. From the diner’s perspective the meal is delicious and seamless. You feel comfortable and taken care of.

Any wine, meal or place to visit on your bucket list? I’ve been to lots of places in Asia, but never Japan. I would love to go to Japan and eat lots of sushi.
